3 Funky Pancake Recipes for Shrove Tuesday

We all know that this is possibly one of the best days of the year. There is nothing we love more than the fact that we have a full day dedicated to glorious pancakes.

So, will you be flipping those pancakes this Tuesday or do you want something that little bit more exciting? Well, these three funky recipes will definitely make this Shrove Tuesday one to remember…

Bacon Stuffed Pancakes

Yes, these are as delicious as they sound and they are just as easy to make! This puts two of our favourite breakfast dishes into one amazing combo!

Ingredients:

  • 12 pieces of thick sliced bacon
  • Unsalted Butter
  • Pure Maple Syrup
  • Pancake Mix

Directions:

Preheat your oven to 375 degrees. You need to place your bacon strips on to a baking sheet and cook until they’re nice and crispy.

While your bacon is cooking you now need to make your pancake mix. If you have a packet mix then you can read the instructions… or alternatively you need to make your own mix. You can get three packet mixes of pancake mix for just £1 now at B&M. This means you can save time making the pancakes and spend more time eating them!

Once your bacon has finished cooking, you need to spray your pan with some cooking spray.

We know that you need a non-stick pan when it comes down to pancakes because you don’t want them to stick . So, if you’re planning on flipping those pancakes then treat yourself to a brand new Russell Hobbs pan at B&M.

Heat this over a medium-high heat and place your bacon in the middle of your frying pan. You need to pour around ¼ of a cup of pancake mix into the pan on top of the bacon.

You need to cook for approximately 2-3 minutes on each side until your pancakes are perfectly done!

Then, top your delicious pancakes with maple syrup and enjoy!

Cinnamon Swirl Pancakes

Could you think of any better combination? I really don’t think so…

Ingredients:

  • Pancakes:
  • 1 cup of flour
  • 2 teaspoons of baking powder
  • Just a pinch of baking soda
  • ½ teaspoon of salt
  • 1 cup of buttermilk milk
  • 1 large egg – lightly beaten
  • 1 tablespoon of canola oil

Cinnamon Filling:

  • 1/2 cup of melted butter
  • 2/3 cup of brown sugar
  • 1 tablespoon of ground cinnamon
  • 3 tablespoons of flour

Vanilla Cream Syrup:

  • 1 cup of heavy cream
  • ½ vanilla pod
  • 2 cups of sugar

Directions:

Add your flour, baking powder and salt into one bowl and whisk it together. Continue to add the milk, the oil and the egg. You need to stir this together until the batter is moistened.

In a smaller, separate bowl you need to mix the butter, brown sugar and the cinnamon. Then scoop this filling into a small freezer bag and set it aside (not in the freezer).

You need to place the syrup ingredients into a saucepan and place over a medium heat. Continue to heat until the sugar is dissolved. Be sure to remove the vanilla pod before you serve the syrup.

To actually cook the pancakes you need to spray a large pan with cooking spray over a medium heat.

Pour your pancake batter onto your heated skillet, then you need to pipe a spiral in your pancake with cinnamon filling.

Monitor until bubbles begin to appear on top of the pancake – when this occurs you need to flip with a spatula and cook again until brown on the underside. The perfect non-stick spatulas can be bought from B&M at cheap prices and with funky colours to brighten up your kitchen completely. Or alternatively, you can try your go at flipping your pancake in the air… let’s see if you can do that without messing it up!

Serve with your syrup and you have an absolutely delightful combo!

Dutch Baby Pancake

This is for all those cake lovers. This is a different twist on the average pancake – one that you can slice up and serve!

Ingredients:

  • 3 tablespoons of unsalted butter
  • 3 eggs
  • 3/4 cup of whole milk
  • ½ cup of flour
  • A pinch of salt
  • ½ teaspoon of pure vanilla extract
  • 1 tablespoon of fresh lemon
  • 1/4 cup of sugar plus a separate tablespoon of sugar

Directions:

Firstly, you need to preheat your oven to 425 degrees. In a small frying pan melt two tablespoons of butter on a medium heat.

In a blender add your eggs, milk, salt, vanilla, flour and your cup of sugar. You need to blend this until it reaches a foamy consistency – which should take around one minute.

Pour all of your batter into your pan and bake until it has puffed nicely and is lightly brown – this should take around 20 minutes.

Following this, you need to dot one tablespoon of butter and sprinkle your sugar and lemon juice on top. Slice this delight up, just like a cake, and serve immediately!
