What you’ll need:

  • 2 rashers of bacon

  • ½ bunch of fresh thyme

  • 2kg leeks

  • Sea salt

  • Freshly ground black pepper

  • 800g cooked white turkey meat

  • Plain flour

  • Turkey, chicken or veg stock

  • Creme Fraiche

  • 500g puff pastry

  • Roasted chestnuts

  • 2 sprigs of fresh sage

  • 1 free range egg
