Best of Pinterest: Healthy Cake Recipes

Mmm… here in the B&M office we just love cake - but we’re sure we’re not alone in wishing it was a bit better for us. Well, a quick browse through Pinterest has taught us that yes, in fact, there are a plethora of low fat baking solutions that will enable us all to eat cake and not feel as guilty. We’ve even found what’s become one of our favourite healthy brownie recipes!

So, without further ado, let’s get stuck in and discover our top (sort of) fat free cake recipes. So grab your apron and enjoy!

Easy Yoghurt Cake

Total time: 50 minutes
Serves: 10 people

Shopping list:

  • 1 cup fat-free Greek natural yoghurt
  • 3 eggs
  • ½ cup of vegetable oil
  • 1 cup of sugar
  • 1 ½ cups of flour
  • 1 tablespoon of baking powder
  • Icing sugar

Method:

1. Heat your oven to 180°C and grease your 8/9 inch cake pan.
2. Using a hand mixer, gently beat your eggs in a medium bowl.
3. Add the oil, sugar and yoghurt and beat for one minute until smooth.
4. Add the flour and baking powder and beat for approximately one more minute.
5. Pour the mixture into the greased cake pan and bake for 35-40 minutes.
6. Once cool, sprinkle with icing sugar.

B&M Top Tip: instead of guessing, use a measuring jug to make sure you get the exact right amount of ingredients. 


Oat and blueberry blender muffins

Total time: 20 minutes
Serves: 8 people

Shopping list:

  • 1 cup of rolled oats
  • 2 large bananas
  • 2 large eggs
  • 1 cup of Greek yoghurt
  • 1 tablespoon of honey
  • 1 ½ teaspoons of baking powder
  • ½ teaspoons of vanilla extract
  • A pinch of salt
  • 1 cup of fresh or frozen blueberries

Method:

1. Preheat oven to 180°C and line a muffin tray with muffin cases, before spraying them with a little bit of spray oil.
2. Put all ingredients, except for the blueberries, into a blender and blitz until mixed well.
3. Stir in half the blueberries.
4. Pour mixture into the muffin cases until they are ¾ full. Top the cases with the remaining blueberries.
5. Bake for 15-20 minutes and allow to cool on a wire rack.

Sweet potato healthy brownies

Total time: 70 minutes
Serves: 10 people

Shopping list:

  • 500g of sweet potatoes
  • 12 medjool dates
  • 7 tablespoons of maple syrup
  • 100g of ground almonds
  • 2 tablespoons of melted coconut oil
  • A pinch of salt
  • 100g of ground oats
  • 8 tablespoons of raw cacao powder
  • 2 tablespoons of almond butter

Method:

1. Preheat the oven to 180°C, and peel the sweet potatoes.
2. Cut the potatoes into chunks and steam them for 20 minutes or until they become soft.
3. Remove the potatoes and add them and the dates into a food processor.
4. Mix the potatoes and dates mixture with the rest of the ingredients. Stir well.
5. Place in a lined baking dish and cook for about three quarters of an hour.
6. Allow to cool for 10 minutes.

Raw vegan raspberry cheesecake

Total time: 30 minutes
Serves: 10 - 12 people

Shopping list:

  • 1 ½ cups of ground almonds
  • Zest of one lemon
  • 2 tablespoons + ½ cup of maple syrup
  • 2 ½ cups of cashew nuts
  • 3 cups of raspberries

Method:

1. Take your cake pan and line it with greaseproof paper.
2. Combine all crust ingredients, mixing well until everything is distributed evenly.
3. Create an even crust layer by pressing the mixture into the bottom of the cake pan.
4. Refrigerate for at least half an hour.
