Ingredients

    For the cupcakes
  • 110g self-raising flour
  • 100g caster sugar
  • 110g butter
  • 2 eggs
  • 1tsp vanilla extract
  • 2tbsp milk
For the decoration
  • 250g Betty Winters Ready to Roll Icing - White
  • 250g Betty Winters Ready to Roll Icing – Red
  • 250g Betty Winters Ready to Roll Icing – Yellow
  • 250g Betty Winters Ready to Roll Icing – Green
  • 250g Betty Winters Ready to Roll Icing – Blue
  • 250g Betty Winters Ready to Roll Icing – Black
  • 250g Betty Winters Ready to Roll Icing - Pink
  • Cooled boiled water
  • Cooled boiled apricot jam
Equipment
  • Scissors
  • Rolling pin
  • Pastry brush

  • Round cutter (3”)
  • Icing sugar
  • Small triangle cutter

Method

For the cupcakes:

  1. Pre-heat the oven to 180C/Gas 4
  2. Mix the butter and sugar in a bowl and then gradually beat in the eggs. Stir in vanilla extract.
  3. Add the self-raising flour, folding in with a large spoon. Add milk gradually until the mixture starts to 'drop'.
  4. Spoon mixture into lightly greased paper cases. Put them into a muffin tin and pop in the oven.
  5. Bake for 10-15 minutes until golden brown. Cool for 10 minutes.

For the decoration:

  1. Once cool, prepare the cupcakes by brushing over the surface with a thin layer of apricot jam.
  2. On a clean, dry surface knead each colour of Betty Winters Ready to Roll Icing separately until pliable.
  3. Dust the work surface with icing sugar and pin out the coloured icing of choice until 3-4mm thick.
  4. Cut circles using the circle cutter and place on top of the prepared cupcakes to cover.
  5. Pin out the icing again to 1-2mm thick and cut out several triangles of each colour.
  6. Place the triangles in alternate colours in a line across the middle of the cupcakes and attach with a small amount of water to create bunting.
  7. Lastly, roll the white icing into a very thin sausage and attach across the top of the bunting to create a string effect.

B&M Top Tip: If you don't have a triangle cutter, roll a long, thin strip of icing and trim the top, bottom and sides with a sharp knife to create straight edges. Cut across diagonally alternating left and right to create triangle shapes.
