Mother’s Day is a beautiful way to show our mothers how much we appreciate them, and a perfect way to show them is through a special gift, and what gift is more special than good food?

This strawberry stuffed french toast is as delicious as it is luxurious, tempting you with the sweet cream cheese filling and juicy strawberries. Don’t forget to add the dusting of icing sugar to top it off too to bring the air of celebration for your mum this Mother’s Day.

Let your mum sit back as you prepare breakfast for once. While she waits, you can make your Mother’s Day brunch boozy with a refreshing mimosa by mixing equal parts orange juice and sparkling wine into your best champagne glasses.

If it’s a bit too early for a tipple, you can easily make a non-alcoholic option by switching to any alcohol-free sparkling wine of your choosing.

Ingredients

  • 3 Eggs
  • 200ml Milk
  • 1 tsp Vanilla Extract
  • 1 tbsp Cinnamon
  • 50g Butter
  • 4 slices of slice brioche or thick white bread
  • 100g Strawberries
  • 300g Whipped Cream Cheese
  • 100g Icing Sugar

Method

  1. To begin, whip together the cream cheese and icing sugar until light and creamy.
  2. Next, slice the strawberries and fold them into the mixture and put it into the fridge to set.
  3. Then, whisk the eggs, milk, cinnamon and vanilla extract in a large bowl.
  4. After, spread the strawberry and cream cheese mixture evenly onto a slice of brioche/bread and then place another slice on top.
  5. Soak each side of the sandwich in the egg mixture.
  6. Heat a frying pan or skillet over low-medium heat and melt the butter until it bubbles and browns.
  7. Place the sandwich into the hot pan and fry until it browns. Flip it and repeat on the other side.
  8. Once both sides are nicely browned, dust with icing sugar and slice in half.
  9. Serve to your mum and enjoy your sweet brunch treat as part of your celebrations!
