Ingredients

    For the Cupcakes
  • 145g Unsalted Butter or Baking Spread
  • 145g Caster Sugar
  • 145g Self-Raising Flour
  • 3 Large Eggs
  • 1 tsp Baking Powder
  • 1tsp Vanilla Extract
  • 20ml Whole Milk
  • 30g Strawberry Milkshake Powder
For the Buttercream
  • 375g Icing Sugar
  • 200g Unsalted Butter
  • 25g Strawberry Milkshake Powder
  • 3-4tbsp Whole Milk (optional)

Method

To Make the Strawberry Milkshake Cupcakes

  1. Preheat the oven to 180C/160 Fan. Line a muffin tray with cupcake liners and leave to one side.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add in the remaining ingredients and whisk until they are all combined.
  4. Spoon the mixture into the cupcake liners. I use a small ice cream scoop to do this so I know that they are all even.
  5. Bake in the oven for 15-20 minutes. You will know the cupcakes are ready when they are springy to the touch.
  6. Leave them to cool for 15-20 minutes before moving them to a wire cooling rack to cool fully.


To Make the Buttercream

  1. Once the cupcakes have cooled completely make the buttercream.
  2. Beat the butter for 5-10 minutes until it is soft and supple.
  3. Add in the icing sugar and strawberry milkshake powder.
  4. If the buttercream is too thick add 1 tbsp of whole milk and mix again. Repeat until the buttercream is the desired consistency.
  5. Pipe the buttercream onto the top of the cupcakes and decorate with a paper straw and some sprinkles.
