That first bite of a scone with lashings of cream and a dollop of fresh, punchy jam is always a welcome treat. Then, there’s that age-old question, what comes first, the jam or the cream? You decide! Whatever the toppings, you know that the warm, light, and buttery taste will make you feel all cosy inside. Now all that’s needed is a piping hot brew or a toast with champagne to pair.

This sweet, traditional treat can be made in less than 20 minutes and is perfect to share between friends. Because who doesn’t enjoy a scone (or two)? You could even serve it on a quirky cake stand to help create an afternoon tea vibe!

These scones have been paired with rich clotted cream and blackberry jam for a twist. Tuck in and enjoy!

Ingredients

  • 350g self-raising flour, plus a small amount for dusting
  • 1 tsp baking powder
  • 85g unsalted butter, cubed
  • 3 tbsp caster sugar
  • 175ml milk
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • Squeeze lemon juice
  • 1 beaten egg to glaze
  • Your favourite toppings, clotted cream and blackberry jam
Equipment
  • 1 medium-sized bowl
  • Weighing scales
  • 1 wooden spoon
  • 1 pastry brush
  • 1 baking tray
  • 5 cm cutter or a glass if you don’t have one!
  • 1 measuring jug

Method

  1. Pre-heat the oven to 200C fan with the baking tray inside.
  2. Pour the self-raising flour into the medium-sized bowl with ¼ tsp salt and baking powder, mix till combined.
  3. Tip the milk into a measuring jug and heat in the microwave until warm, but not hot (for around 20-30 seconds). Add the vanilla extract and a squeeze of lemon juice into the warm milk. Stir this in and then leave aside for a couple of minutes.
  4. Return to your medium-sized bowl and make a well in the dry mix. Next, pour in the liquid and mix it all together swiftly with a wooden spoon and then continue to combine with your hands.
  5. Dust some self-raising flour onto the work surface and tip the dough out. Pop some flour on your hands and dust a little over the dough. Now, it’s time to fold the dough over 2-3 times to bring it together and make it a little smoother. Pat the dough so it’s round and about 4cm thick.
  6. Take the 5cm cutter or glass and dip it into some self-raising flour. Then, press into the dough, cutting out 4 rounds. Then repeat this to make another 4.
  7. Brush the top of the scones with the egg wash, then pop your scones onto the pre-heated baking tray. Bake the scones for 10 mins until they rise and look slightly golden!
  8. Enjoy the warm, delicious scones with a generous helping of clotted cream and jam. You could even top them with fresh strawberries and serve with a drink of your choice!
