Recipe: Oreo & Baileys No Bake Cake

This Oreo & Baileys no bake cake is a perfect weekend creation!

Recipe:

800g Oreo Cookies

125ml Baileys

3 tsp Vanilla Flavouring

1 ltr Double Cream

3 tbsp Icing Sugar

Method:

1. With an electric whisk or a good, strong arm beat together the cream, Baileys, vanilla and sugar until you can form peaks that stay put and don’t sink.

2. A springform cake tin is best for this, lined with cling film to help you remove the cake once it’s chilled. Line the bottom with an even layer of Oreos, then spread over a smooth layer of the cream mixture, about 1cm thick. Continue alternating this mixture until you have filled your cake tin to the very top, the final layer should be cream.

3. Chill for 4-6 hours or overnight. Once chilled, carefully loosen your tin and remove from the cake. If the cake has set then it shouldn’t sink, however if you notice any movement, reassemble the tin and chill for a few hours more.

4. Use the cling film to lift the cake from the base and reveal the edges of the cake. Once transferred to a plate, decorate the top with the remaining Oreos, either pushing them into the cream or crushing them and sprinkling on top.
