Ingredients

  • 1 tbsp unsweetened cocoa powder
  • 50g artificial sweetener (sucralose-based)
  • 4 egg whites
  • A pinch of cream of tartar, about 1/8 tsp
  • 1 tsp vanilla extract

Method

  1. Turn the oven to 110°c and whisk the cocoa and sweetener together in a small bowl.
  2. Line a baking tray with greaseproof paper
  3. In a large mixing bowl, beat the egg whites and cream of tartar until foamy.
  4. Add the vanilla, and beat until stiff peaks form. (You could also do the upside-down-bowl-over-your-head trick. If they’re done they should stay in the bowl. If they’re not, you end up with egg whites all over your head!)
  5. Fold in the cocoa powder mixture until the whole thing is nicely blended.
  6. Position dollops of meringue – around a tablespoon size – onto the lined sheet and put in the oven for an hour.
  7. When they’re ready, take them out and leave them to cool fully on a wire tray before eating.
