Favourite Festive Cocktails: Rossini

If you’re a bellini fan, you’ll love the taste of this strawberry-infused rossini. It’s red too, so it looks great on the Christmas table. Bottoms up!

Ingredients

• 3 strawberries (per person)
• 1 tsp sugar
• 1 squeeze of lemon juice
• 125ml Prosecco

Method

1. Blend the strawberries, sugar and lemon juice to make a syrup.
2. Add a bit of prosecco to a champagne flute.
3. Pour the syrup and rest of the prosecco into a shaker, fill with ice and stir.
4. Strain the glass, and top up with some more prosecco for extra fizz!
