It’s that time of year again, Autumn has rolled around, and the Great British Bake off is due back on our screens!

As delicious as all the incredible cakes created on GBBO are, I feel like the savouries need some attention too. This is one of my favourite things to whip up as they’re easy to make and the whole family will love them.

You can make your pastry from scratch, or if you feel like you’re not quite the ‘star baker’, you could use ready rolled instead.

Ingredients

    For the Shortcrust Pastry
  • 225g plain flour,
  • 100g butter,
  • Pinch of salt,
  • A few tablespoons of water,
  • 1 egg (For egg wash)
For the filling
  • 2 large potatoes, peel and diced,
  • 1 medium onion, diced finely,
  • Pinch Salt & Pepper,
  • ½ tsp mustard,
  • ½ tsp smoked paprika,
  • 2 tbsp cream cheese,
  • 150g grated cheddar

Method

  1. First, make your pastry by adding the flour to a mixing bowl. 
  2. Add in the diced butter and rub it together with your fingertips until it combines to make a breadcrumb like texture.
  3. Add in the salt and a few tablespoons of water. Mix it together until it becomes a dough. 
  4. Turn the dough out onto a floured surface and knead it briefly. 
  5. Wrap it in cling film and then add it to the fridge while you prepare the filling. 
  6. Boil the potatoes in a pan of salted water.
  7. Fry the onions off in a frying pan with a small amount of butter or olive oil. You don’t want to get them too crispy!
  8. When the potatoes are cooked, drain them and add them back to the saucepan. Use a potato masher to mash them all up until smooth. 
  9. Add the fried onions, cream cheese, cheddar cheese, mustard, smoked paprika with a pinch of salt and pepper. Mix together until the cheese has melted and you have a smooth filling. Allow to cool. 
  10. Roll out the pastry on a floured surface. Use a large circle cutter to cut out a circle. Whisk up an egg and add some on the edges, then add a spoonful of filling on one half. 
  11. Fold the other half of the pastry over, then use a fork to press the edges together. 
  12. Lay the pasties out on a lined baking tray and brush them all with egg wash.
  13. Bake them in the oven for 25 minutes, until the pastry is golden.
