In need of a quick recipe that you can whip up right before the party begins? This strawberry bruschetta recipe is a crowd-pleaser and looks the part too! Sweet meets savoury with a tantalising combination of juicy strawberries and sharp balsamic vinegar. This heavenly combination provides balance with light and fruity strawberries, a hint of sweetness, and a lavish creamy base.

Ingredients

  • 1 baguette
  • 100 g strawberries
  • 50ml balsamic glaze
  • 3 tsp olive oil
  • 125g mascarpone
  • A small bunch of fresh basil
Equipment
  • 1 baking tray
  • 1 sheet of tin foil
  • 1 kitchen knife
  • 1 metal spoon
  • 1 small bowl

Method

  1. Preheat the oven to 200°c fan.
  2. Chop the baguette into 2cm slices.
  3. Lightly brush the baguette slices with olive oil.
  4. Place the baguette slices onto a foil-lined baking tray and bake for 10 minutes.
  5. Meanwhile, wash the strawberries and chop them into 8ths.
  6. Spoon the mascarpone into a small bowl and mix with 2 teaspoons of olive oil, 1tsp freshly ground black pepper and 2 tsps of sea salt.
  7. Finely chop the fresh basil.
  8. Once the baguette slices are lightly toasted, layer with mascarpone, strawberry slices, basil, and balsamic glaze.
  9. Enjoy!

Adding a dash of balsamic vinegar is just enough to cut through the mellow mascarpone but doesn’t take away from the overall flavour. Let’s not forget the basil which adds further colour and an aromatic bite!
