Guest Recipe: Anna's Creamy Salmon & Zucchini Pasta

Who doesn't love pasta? Easy and quick to cook, pasta is a real crowd-pleaser for families of all sizes with busy schedules. And for anyone looking to reduce their meat in-take after a carnivorous Christmas, salmon makes for the perfect main ingredient.

Try Anna's recipe for a simple, quick and deliciously healthy meal: ideal for light lunches or dinners.

Ingredients

  • 300 grams of penne pasta
  • 1 large zucchini (chopped)
  • 2 slices of raw salmon (cut)
  • 1 small onion
  • 3 garlic cloves
  • 1 pack of cream cheese (you can use the light/low fat version)
  • Salt and pepper
  • A knob of butter (to grease the pan)

Method

  1. Fill a pot with water, add salt and pasta, and cook according to the instructions on the pack
  2. In a pan, put 2 teaspoons of butter along with the garlic and the onion and cook until golden brown on a medium-high heat
  3. Add the zucchini and cook for another 5-10 minutes until they soften. Make sure to stir gently from time to time with a wooden spoon
  4. Once the zucchini is done, put it aside on a plate
  5. Add again 2 teaspoons of butter in the same pan and add the salmon. Cook until it has a nice brown colour; 7 minutes should be enough
  6. By the time you finish with these steps your pasta should be cooked. Strain and place back in the pot
  7. Add the cooked zucchini and salmon to the pasta, as well as the cream cheese and stir together gently
  8. Add salt and pepper to taste.
