Guest Recipe: Chikumo's Chili Lime BBQ Chicken

It's officially BBQ season and with the British weather not letting us down for once, I've been able to perfect this chili lime BBQ chicken recipe. Not only is this juicy, tender chicken packed with flavour, the citrusy chili kick lends perfectly to sandwiches, salads and so much more.

  • Cook Time: 15 - 20 minutes
  • Total Time: 35 - 40 minutes

  • 6 boneless chicken thighs
  • 3 garlic cloves, crushed
  • 1 tsp chili flakes
  • 2 tbsp coriander, roughly chopped (plus extra for dressing)
  • 2 limes, juice and zest
  • 1tsp honey (optional)
  • Salt to taste


  1. In a bowl, add the chicken thighs, garlic, chili flakes, coriander, lime zest, lime juice, honey (optional) and salt to taste
  2. Mix thoroughly and leave to marinate. For best results, leave to marinate for at least 2 hours to allow the lime juice to tenderise the chicken
  3. Place the chicken onto a BBQ (perfect when the coals turn white and ashy)
  4. After 7-9 minutes, turn and cook for a further 7-9 minutes or until thoroughly cooked
  5. Once cooked, top with extra coriander and serve
