Ingredients

    For the cookies
  • 220g self-raising flour
  • 75g caster sugar
  • 150g soft brown sugar
  • 1 large egg
  • 125g soft unsalted butter
  • 1tsp vanilla
  • ½ teaspoon salt
  • 100g white chocolate chips
  • 100g large brown chocolate chips
For the buttercream
  • 175g soft unsalted butter
  • 100g icing sugar sifted
  • 1tsp vanilla
For the decoration
  • 12 eyes
  • 400g black royal icing

Method

For the Cookies

  1. Preheat the oven to 200C/180C for fan-assisted ovens. 
  2. Place the butter, sugar, salt, and vanilla into a bowl. 
  3. Beat together with an electric whisk for 40 secs. Stop, scrape down the bowl, add the egg and mix for a further 40 secs.
  4. Add all the flour and mix for 30 seconds until completely combined. 
  5. Fold in the chocolate chips until evenly distributed. 
  6. Place the cookie mix onto a baking tray in 12 equal balls. 
  7. Bake for 6-8 minutes or until browned.
  8. Leave to cool.

For the Buttercream

  1. Place the butter, icing and vanilla into a bowl.
  2. Beat together with an electric mixer for 1 min. Stop, scrape down the bowl and mix for a further minute or until the buttercream is smooth.
  3. Place the buttercream into the piping bag and set it to one side.

For the Decoration

  1. Split the icing sugar into 12 equal balls and roll out with the palm of your hand until approx. 10cm long.
  2. Cut each piece in half and leave it to one side.
  3. Add a large spoon of buttercream to one side of the cookie, place 4 of the icing pieces on opposite sides and cover with another cookie.
  4. Get two eyes and place a small amount of icing on the back of each one and place it on top of the cookie.
  5. Repeat until you have 6 spiders.
