Christmas is a time for festive smells and warming flavours, which makes baking the perfect seasonal pastime! If you're looking for an easy yet delicious recipe to keep the family happy this winter, why not try Claire's Gingerbread Biscuits?

Ingredients

  • 175g plain flour
  • ½ tsp bicarbonate of soda
  • 1 tsp ground ginger
  • 50g butter
  • 87g soft brown sugar
  • 2 tbsp honey (or golden syrup)
  • 1 small egg

Method

  1. Pre-heat oven to 180°C/350°F/Gas Mark 4.
  2. Sift all the dry ingredients – flour, bicarbonate of soda and ground ginger – into a large bowl. Cut the butter into cubes and rub into the flour until it resembles breadcrumbs (if you're struggling, make your hands cooler by running them under the cold tap; this will make the mixture easier to work with).
  3. Add the sugar to the bowl and mix well.
  4. Warm the honey (a few seconds in the microwave should do it) and pour into the bowl along with the beaten egg. Continue mixing until they are well combined.
  5. Transfer the dough onto a clean, floured surface and knead it for a few minutes. The dough should be smooth and pliable.
  6. Roll out the mixture to about half a cm thick. Keep the dough and rolling pin floured so it doesn’t stick.
  7. The fun part: cut out into shapes! You can use anything you can get your hands on, but as it's the season to be jolly we dug out our finest Christmas cutters, including trees, stars, snowflakes, candy canes and snowmen! If you don't have anything festive, basic shapes likes circles and squares will look just as effective once decorated.
  8. Bake for 10-12 minutes – just keep an eye on them in case they start to brown quicker than expected!
  9. Finally add some decoration using a little icing and some edible snowflakes and sprinkles. Check out the images above for some inspiration!
