Spring means only one thing to me, the sunshine! And with the sunshine comes delicious salads and pasta salads. This dish has lots of traditional Greek flavours and can be kept in the fridge for 3 days. I used wholemeal pasta for this dish, but you can use any pasta you like. 

The beauty of this recipe is that you can change the elements you include, add more or less, and change it up to suit your tastes. I really like olives, so added a few extra into this when I made it!

This recipe is vegetarian, and you could switch it up to being vegan by swapping the feta for vegan cheese or just leaving it out.

Ingredients

  • 1 tbsp olive oil
  • 1 tablespoon wholegrain mustard
  • 250g cooked and cooled pasta of your choice
  • 2 tablespoons balsamic vinegar
  • salt and freshly ground black pepper
  • 180g feta cheese
  • 1/2 cucumber, cubed
  • A handful of cherry tomatoes, sliced
  • 8 olives, sliced up
  • 1/2 red onion, finely diced

Method

  1. Whisk together the olive oil, mustard and balsamic vinegar, salt & pepper to make your dressing
  2. In a bowl, add the pasta, cucumber, feta, tomatoes and red onion
  3. Pour over the dressing, mix well and serve
  4. Leave in the fridge and consume within 3 days
