Looking for a truly indulgent sweet snack the whole family can enjoy? Laura's white chocolate and raspberry fudge is irresistibly tempting!

Combining smooth white chocolate and fresh, fruity raspberries is just a perfect combination and a match made in heaven. This fabulous fudge recipe can be whipped up in minutes and set in the fridge within a few hours. But be quick, the finished product won't last long as it's absolutely delicious, you won't be able to keep your hands off!

Ingredients

  • 400g White Chocolate
  • 1 379 g tin of Condensed Milk
  • 1 Small Punnet of Raspberries

Method

  1. Wash your raspberries, and leave to dry off on a sheet of kitchen paper.
  2. Break the white chocolate into small chunks and place in a saucepan with the condensed milk. Warm together on a medium heat until combined. Make sure to continuously stir to prevent burning or sticking to the pan. 
  3. Once combined, take off the heat to cool down slightly and place to one side.
  4. Prepare your square baking tray with some greaseproof paper. Ensure you use plenty of paper so that it overlaps the edges of your tray. This will help you lift the fudge out once it's completely set.
  5. Add some of your raspberries to the base of your baking tray. Then add some white chocolate mixture, and repeat until all the mixture has been used. Top off with some raspberries and refrigerate until set.
  6. Once set, cut the fudge into your square pieces and enjoy with a nice cup of tea. Typically, this white chocolate and raspberry fudge will keep in the fridge for up to 7 days, (if it lasts that long!).
