Category: Beef,Slow Cooker

Ingredients

  • 500g beef mince
  • 1 onion - peeled and diced
  • 400g can of tomatoes
  • 200g can of sweetcorn
  • 400g can of baked beans
  • 3 tbsp BBQ sauce
  • 2 tsp dried oregano
  • 1 tsp dried garlic powder
  • Pinch of salt
  • Pinch of black pepper

Method

  1. Preheat the slow cooker to low if cooking for eight hours and high if cooking for four hours.
  2. Peel and dice the onion.
  3. Simply add all the ingredients to the slow cooker pan.
  4. If you are adding salt, do so sparingly as there’s already salt in the beans and BBQ sauce.
  5. Give everything a good mix together using a wooden spoon and then put it into the slow cooker and cook for either four hours on high or eight hours on low.
  6. Once cooked if the stew needs thickening, mix 2 tsp of cornflour into a paste with a drop of cold water.
  7. Stir this through the stew and cook for 3-4 minutes until thickened.

Add your own twist to the slow cooker BBQ beef and beans. If you’re a veggie and swap the beef mince for plant-based mince or 2 cans of lentils.

Need to feed more people? Then bulk up the stew and make it heartier using some extra vegetables - add in chopped peppers or mushrooms or stir through an extra can of baked beans.

Fancy a kick of spice? Add in some red chilli flakes or hot chilli sauce. Or if just the adults want some heat, drizzle the hot sauce on after serving up. You could use this stew as a base for a mince beef pie - just add a puff pastry lid and finish in the oven. Turn this into cottage pie and top it with fluffy mash and some cheese and brown under the grill. Planning on making it a one-pot meal? Then add in some diced potatoes which will cook in the sauce. Then just serve with crusty bread.
