Summer Berry Eton Mess is a delicious and easy summer dessert that can be created in a matter of minutes.

With a jumbled combination of juicy summer berries, silky vanilla cream, and irresistible shards of meringue, desserts don’t get much easier than this!

And best of all? It's a summertime favourite for all to enjoy.

You might pack up the Summer Berry Eton Mess into individual Tupperware boxes and take it with you on picnics, or you could serve it as an easy dessert at barbecue parties in the garden.

You’ll love how simple this recipe is and how little prep is needed. It’s definitely a dessert you’ll want to make again and again this summer.

Ingredients

  • 300ml whipping cream
  • 1 tsp vanilla extract
  • 600g summer berries (we used strawberries and raspberries)
  • 4 meringue nests
  • Mint leaves for decoration

Method

  1. Wash and dry the strawberries and raspberries.
  2. Cut the strawberries into quarters.
  3. Whisk the cream with the vanilla extract until it’s thick and stiff. Doing this in a food processor or using a handheld whisk is easier.
  4. Add the whipped cream and fruit to a large mixing bowl.
  5. With a metal spoon, gently mix the berries into the whipped cream.
  6. Break up the meringue nests into small pieces.
  7. Mix these into the fruity, creamy mixture.
  8. Divide the Summer Berry Eton Mess between the six small bowls.
  9. Decorate with a mint leaf.

Add Your Own Twist To The Summer Berry Eton Mess

  • Fancy some different fruit? Try a dark berries Eton Mess with blackberries and blueberries.
  • Like things tropical? Add some juicy mango pieces and a sprinkling of desiccated coconut.
  • Love chocolate? Add some finely chopped white chocolate to the mixture when you add in the meringues.
  • Use the Eton Mess mixture to fill ice lolly moulds, freeze for 4-5 hours and then enjoy Eton Mess popsicles.
