Perfect for those busy weekdays when you haven’t got the time to spend in the kitchen, this simple dish is straightforward to make but delivers on taste and nutrition.

It’s also perfect for feeding the whole family on bonfire night, simply prep it on the day and serve it with warm crusty bread to celebrate the colder seasons…

Serves: 3 servings

Ingredients

  • 2 tablespoons of olive oil
  • 500g of lamb stew meat
  • 2 large carrots
  • 3 sticks of celery
  • ½ pack of button mushrooms
  • 5 garlic cloves
  • 3 tablespoons of tomato paste
  • A generous sprig of mint leaves
  • 400ml of beef broth

Method

  1. Add the olive oil to the slow cooker pot to heat.
  2. At the same time season the lamb with two garlic cloves and a handful of finely chopped mint and tomato paste.
  3. Add the lamb to the heated olive oil.
  4. Add the chopped carrots, mushrooms, celery, the remaining garlic cloves and another generous handful of chopped mint.
  5. Stir with a wooden spoon to ensure the ingredients are mixed well.
  6. Add the beef broth and a splash of red wine. Stir again.
  7. Leave to cook on a low and slow setting. Leave for 3 – 4 hours. Served as needed with chunky bread and fresh mint garnish.

If you’re cooking for your family and have some pickier children at the table, you can swap the vegetables for something they may be more used to. For those who want to bulk out the meal to make it go further, why not try adding potatoes or pulses such as pearl barley and lentils?
