Here at B&M HQ we simply love The Great British Bake Off. Who doesn't? We love cake week, we love pastry week...hell, we love every week! And some of the showstoppers are truly inspirational.

But the easiest bakes are sometimes the best. So dust off that apron and dust down your work surface, this cupcake recpice from Little Vix's Cupcakes is ideal for getting you back in the baking mood.

Ingredients

    For the cake
  • 150g soft butter
  • 150g self-raising flour
  • 150g caster sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 2 tbsp milk
  • 1 tsp baking powder
For the icing
  • 75g butter
  • 175g icing sugar
  • Dash of milk
  • 4 tbsp strawberry jam
  • Piping kit (or free hand)

Method

For the cupcakes

  1. Preheat the oven to 180°C (fan 160°C) / 350°C / Gas Mark 4. Line a cupcake tray with paper cases.
  2. Cream together the butter and sugar until light and fluffy.
  3. Beat the eggs in one at a time and then add the vanilla extract, milk and mix together.
  4. Sieve in flour and mix until all ingredients are combined.
  5. Using a teaspoon, fill the cases evenly with the mixture (be sure to give them an equal amount).
  6. Bake for approximately 15-20 minutes until lightly golden and set.
  7. Remove cupcakes from the oven and leave to cool on a wire rack. When cool using a sharp knife, cut a circle at the top of each cake and cut these in half.

For the icing

  1. Whisk the butter and sift in half the icing sugar. Once mixed add the rest of the sugar and a dash of milk. Continue whisking.
  2. Fill each cupcake with a little spoonful of jam and pipe a small amount of buttercream on top.
  3. Carefully press the straight sides of the cut pieces into the buttercream (like wings) and dust lightly with icing sugar.
