Mini Egg Blondies

Get into the Easter spirit with these tasty Cadbury Mini Egg Blondies!

They're a brilliant bake for the weekend - and with those delicious mini eggs on top, they're perfect if you're fans of the sweet treat!

  • 250g butter
  • 150g mini chocolate eggs
  • 150g light soft brown sugar
  • 300g plain flour
  • 125g caster sugar
  • 2 large free-range eggs
  • 1½ tsp vanilla extract


  1. Preheat the oven to 180ºC.
  2. In a pan melt together the butter and both sugars, and keep over a gentle heat until it turns to a golden toffee colour.
  3. Set aside the butter/sugar mixture and in a mixing bowl whisk together the eggs and vanilla. Then slowly add into the butter and sugar mixture. Whisk vigorously until well combined and thickened.
  4. Sift in the flour and gently fold it in. Pour the batter into a square tin.
  5. Bake for around 20 minutes. Meanwhile, halve the mini eggs.
  6. Take the blondies out the oven and while still hot sprinkle over the mini egg halves.
  7. A llow to cool, then enjoy!
