Recipe: Doritos Mac 'n' Cheese

Mac and Cheese is such brilliant comfort food... but when you add Doritos to the mix, your chances of enjoyment drastically go up!

Ingredients

• 225g Macaroni
• 3 tbsp Butter
• 2 tbsp Flour
• 1/4 tsp Pepper
• 1/4 tsp Salt
• 1/4 tsp Garlic Powder
• 1/4 tsp Onion Salt
• 1/8 tsp Paprika
• 500ml Whole Milk
• 125g Grated Cheddar Cheese
• 60g Grated Monterey Jack Cheese (Mexican Cheese)
• 60g Grated Mozzarella Cheese
• 1 handful Doritos

Method

1. Preheat oven to 180° Celsius (350°F or Gas Mark 4)
2. Melt 3 tbsp of butter in a large saucepan over low heat. Whisk in the flour, pepper, salt, garlic powder, pepper, onion salt and paprika, until well combined. Continue to whisk and cook for 2 minutes
3. Gradually whisk in the milk. Increase the heat to medium and bring the mixture to a boil, whisking frequently
4. Once the mixture comes to a boil, reduce the heat to low and allow it to simmer for 5 minutes, whisking frequently
5. Stir the cheddar cheese, Monterey Jack cheese and mozzarella cheese into the saucepan
6. Add the cooked macaroni to the cheese sauce and stir well to combine. Don't be tempted to eat that cheesy creaminess yet!
7. Pour the mixture into a greased 1.5 quart/36cm baking dish and sprinkle cheese on top
8. Sprinkle the crushed Doritos evenly over the top
9. Bake for 20-25 minutes
10. Remove from the oven and allow to cool for 3 minutes before serving
