Recipe: Giant Ice Cream Cookie Sandwich

Ingredients

  • 440g brown sugar
  • 400g caster sugar
  • 480g butter (melted)
  • 4 eggs
  • 1 tbsp vanilla extract
  • 640g plain flour
  • 1 tsp baking powder
  • 500g chocolate chips

Method

  1. Preheat the oven to 190?C / 375?F / Gas Mark 5.
  2. Whisk together brown sugar, white sugar and melted butter and mix.
  3. Mix in eggs and vanilla, follwed by flour and baking powder and mix together. Fold in the chocolate chips.
  4. Line a springform tin with greaseproof paper and use an ice cream scoop to add 9 scoops of the cookie dough and bake for 15-20 minutes - repeat this step for the second (top) layer.
  5. Once baked remove from the oven and leave to cool.
  6. Once cooled top the cookie with as much ice cream as you want to fit in between. Remove from the tin and top with the second giant cookie.
  7. Enjoy with friends!
