Recipe: Gin & Tonic Pancakes

We've taken pancakes to the NEXT level this year by adding an extra Gin touch to them!

Our Mrs Cuthbert's flavoured gins are a perfect addition - ideal for sweet toothed Gin fans!

Ingredients

    Pancake Mixture
  • 200g Self Raising Flour
  • 2 tbsp Caster Sugar
  • 1 Egg
  • 200ml Tonic
  • 50ml Flavoured Gin (Cherry Bakewell/Lemon Drizzle)
Icing Mixture
  • 200g Icing Sugar
  • 50ml Flavoured Gin (Cherry Bakewell/Lemon Drizzle)

Method

  1. Add Self Raising Flour, Caster Sugar, Egg, Tonic and the Gin of your choice to a large bowl, then whisk together until mixture is fully combined
  2. Heat 1 tbsp of vegetable oil in a pan to medium and then pour into a ladle of pancake mixture, cook on each side for 1-2 minutes (the mixture should make around 8 pancakes)
  3. In a bowl combine icing sugar and the gin of your choice until smooth
  4. Pour over icing mixture and then decorate with cherries or lemon zest
  5. Enjoy!
