Recipe: Toffee Crisp Cheesecake Recipe

Indulgently chocolately, this cheesecake recipe is simple to follow but the results are utterly delicious!

No bake required, just a tasty Mars, butter and Rice Krispies mixture combined with cream cheese, icing sugar, dark chocolate, double cream and of course Toffee Crisp pieces!

Ingredients

    For the base
  • 4 Mars bars
  • 90g butter
  • 100g Rice Krispies
For the filling
  • 80g icing sugar
  • 450g Philadelphia cream cheese
  • 1 tbsp vanilla extract
  • 5 Toffee Crisps (cut into pieces)
  • 200g plain chocolate
  • 110ml double cream
For the decoration
  • Caramel sauce or melted chocolate
  • 2 Toffee Crisp bars, chopped

Method

For the base:

  1. Melt the Mars bars in a glass bowl over a pan of boiling water. Add the Lurpak and stir
  2. Combine the melted Mars and butter mixture with Rice Krispies.
  3. Press into a deep cake tin and leave to set in the fridge.

For the filling:

  1. Melt the plain chocolate in a glass bowl over a pan of boiling water.
  2. In a separate bowl, whisk the Philadelphia, vanilla extract and sugar together in a bowl with an electric mixer until smooth.
  3. Pour the melted chocolate into the cream cheese mixture and combine.
  4. Add the double cream and continue to beat the mixture until well combined.
  5. Fold in the Toffee Crisp pieces.
  6. Place the cheesecake mixture on top of the Rice Krispies base and leave to set in the fridge for 2-3 hours.

To decorate:

  1. Garnish with Toffee Crisp and drizzle with caramel sauce or melted chocolate!
