Slow Cooker Lasagna Soup

  • 2 tbsp Olive Oil
  • 1 Onion
  • 2 cloves Garlic
  • 400g Beef Mince
  • 400g Italian Sausage
  • 1 tbsp Salt
  • 1 tbsp Pepper
  • 1 tbsp Chilli Flakes
  • 1 tbsp Oregano
  • 4-6 Pasta Sheets
  • 2 tbsp Tomato Puree
  • 1L Tomato Passata
  • 1 tbsp Veg Stock Powder
  • 500ml Water
  • 125ml Double Cream
  • 1 ball Mozzarella
  • Basil leaves
  • Parmesan & Garlic croutons


  1. Fry the onion and garlic in the olive oil until translucent, then add your meat. Fry until starting to crisp
  2. In  your slow cooker combine the meat with 4 seasonings and tomato puree, passata. Add the stock powder, water and pasta sheets then pop the lid on
  3. Cook on medium for 2-3 hours, or until the pasta is cooked
  4. Add your cream, bring back up to a simmer for 15 minutes and turn off heat
  5. Add your mozzarella and basil, allow to melt a little, then serve with a little parmesan and some croutons
