Slow cookers usually signal the start of the cold snap, and there’s nothing to warm the cockles quite like a curry. Those warm and inviting Indian spices bring out exquisite flavours with every mouthful. So dust off the slow cooker and get stuck into this fabulous recipe!

Ingredients

  • 1 large onion, halved and sliced
  • 3 tbsp Madras curry paste
  • 400g can chopped tomatoes
  • 2 tsp vegetable bouillon powder
  • 25g red lentils
  • 210g can chickpeas (don’t drain)
  • 1 tbsp grated ginger
  • 1 tsp cumin seeds
  • 1 cinnamon stick
  • 75g curly kale
  • 2 lean lamb steaks, fat removed, diced (about 240g)
  • Cooked rice, to serve

Method

With just 10 mins preparation time, you can get this ready before you go to bed and put it on to cook for 6 hours while you're at work. You'll be able to smell the inviting aromas before you put the key in the door!
