Veggie Paella

Veggie Paella

Bring the Mediterranean to your dinner table with this delicious Spanish rice dish. You will need:

  • A hob
  • A large frying pan

  • Prep Time: 5 minutes
  • Cook Time: 15 minutes
  • Total Time: 20 minutes

  • Olive oil as required
  • Rice of your choice (75 g per person)
  • A vegetable stock cube
  • Chopped mixed bell peppers (¼ pepper per person)
  • Red onion (¼ onion per person)
  • Garlic puree (1 heaped teaspoon per person)
  • A splash of lemon juice (to taste)
  • Paprika (1½ teaspoons per person)
  • Salt and pepper (to taste)


  1. Heat a generous splash of olive oil in your pan over a medium-high heat. Add oil as you go if the mix starts looking dry.
  2. Add the chopped onion and bell peppers and fry until lightly browned.
  3. Add the rice and stir thoroughly, making sure it’s coated with oil.
  4. After about 5 minutes of constant stirring, crumble in the stock cube and add a splash of water.
  5. Once the water is absorbed, stir in the garlic paste.
  6. Continue to add water until the rice has become as soft as you like it.
  7. Add the lemon juice, paprika, salt and pepper and simmer for 2 minutes.
  8. Spoon even portions of paella onto plates and enjoy!
